Pengaruh Pupuk Nitrogen Dan Klon Ubi Jalar Terhadap Sifat Fisik Dan Kimia Ubi Segar Selama Penyimpanan

The aim of this research was to determine the effect of nitrogen fertilizer dosage and sweet potato clones on the physical and chemical properties of fresh sweet potatoes during storage. In this experiment, a pickle group design with two factors was used and repeated three times. The first factor was the Taiwanese clones (Twl-395-6), Ciceh-32 and Tis 5125-26, while the nitrogen fertilizer dose was 22.5 kg N / Ha. 45.0 kg N / Ha, 67.5 N / Ha and 90 kg N / Ha as the second factors. Sweet potatoes were harvested at the age of 4 months, then stored at room temperature for 45 days and observations were made at the ages of 0, 15, 30 and 45 after harvest. The parameters observed included weight loss, water content, starch, reducing sugar, crude fibre, protein, beta carotene and texture. The results showed that the two factors did not interact. The Ciceh-32 clone has better nutritional value in terms of vitamin C, beta carotene, crude fibre and protein content. Tis 5125-26 clone had high starch content, weight loss, low water content and hard texture. Increasing the dosage of nitrogen fertilizers up to 90 kg N / Ha can increase the content of starch, crude fibre, reducing sugars, protein and carotene.
Penelitian yang bertujuan untuk mengetahui pengaruh dosis pupuk nitrogen dan klon ubi jalar terhadap sifat fisik dan kimia ubi segar selama penyimpanan. Dalam percobaan ini digunakan rancangan acar kelompok dengan dua faktor dan diulang tiga kali.sebagai faktor pertama adalah klon Taiwan (Twl-395-6), Ciceh-32 dan Tis 5125-26, sedangkan dosis pupuk nitrogen 22,5 kg N/Ha, 45,0 kg N/Ha, 67,5 N/Ha dan 90 kg N/Ha sebagai faktor kedua. Ubi jalar dipanen pada umur 4 bulan, yang kemudian disimpan pada suhu kamar selama 45 hari dan pengamatan dilakukan pada umur 0, 15, 30 dan 45 setelah panen. Parameter yang diamati meliputi susut berat, kandungan air, pati, gula reduksi, serat kasar, protein, beta karoten dan tekstur. Hasil penelitian menunjukkan kedua faktor tidak terjadi interaksi. Klon Ciceh-32 mempunyai nilai gizi yang lebih baik dalam hal kandungan vitamin C, beta karoten, serat kasar dan protein. Klon Tis 5125-26 mempunyai kandungan pati tinggi, susut berat, dan kadar air rendah serta teksturnya keras. Peningkatan dosis pupuk nitrogen sampai dengan 90 kg N/Ha dapat meningkatkan kandungan pati, serat kasar, gula reduksi, protein dan karoten.
